Our Story

Why the Name Rosebay?
Rosebay is another name for the white Rhododendron flower, commonly found in the mountains of North Carolina. The property is full of rhododendron behind the shop, so we found it quite fitting as the name for the business.
Who We Are
We're Brennah and Clayton Manche, and we are the owners of Rosebay Coffee + Shop and Asheville Jeep Tours. We got married in 2018, have 3 beautiful children, and we praise Jesus for everything, as it is all from Him, for Him, and through Him.
Fun Facts about Clayton: He is an Asheville native, born and raised. He achieved Eagle Scout in 2015, started a hiking company in 2016, switched to Jeep tours in 2022, and became an official member of the Transylvania County Search and Rescue Squad in December 2025.
Fun Facts about Brennah: She is from Kansas and moved to Asheville in 2011. She interned at a local fashion magazine in 2013, studied Business Administration in college, and has always dreamt of having her own boutique. She is the thrifter, creator, and curator of the shop-side of things at Rosebay.
Together, we parent, grow, and work. Rosebay is definitely a realization of a long-held dream. And we are so honored for others to enjoy our dream with us. Thank you for letting us serve you at Rosebay Coffee + Shop!

How We Got Here
Back in the day, Clayton and I would frequent Asheville's Habitat for Humanity Restore. The cherry on top of their wonderful mission, selection, and low prices, was that there was a carafe in the books and records section, full of hot delicious coffee from a local roaster. You could purchase a cup for about a dollar or so and be able to sip while you shop. It was magical. Then 2020 happened and, of course, covid put an end to that.
Fast-forward to 2023: we purchased a local restaurant, Daggies, that had closed in 2020. We initially bought the property as a basecamp for Asheville Jeep Tours, because of the parking lot size, bathroom access, and its proximity to the forest. Since it had sat vacant for a while, the whole building needed work down to the bare bones. We found ourselves with an opportunity to bring something new to the area that would not only serve current tour guests, but our wonderful locals as well.
We began to explore several different ideas, but it really came back to good coffee and good finds, and that was something we knew could be enjoyed by all. We started demo in January of 2025, began renovations that September, and reached the finish line in June 2026.
And so we have this: A space for enjoying top-of-the-line coffee that is ShareWell, served by the kindest of humans, offering great deals on mugs and trinkets and pillows and purses, all while listening to music that just puts you in a good mood in an environment that feels like a haven... that is Rosebay. And we are so excited to welcome you.
